The bitterness of the matcha powder combines perfectly with the sweetness of the white chocolate. If you haven’t tried this combo yet, you definitely should!
You can easily switch the flour to a non gluten-free one if you do not need your cookies to be gluten-free.

Matcha and white chocolate cookies recipe
For 10 cookies
Preparation time: 15 minutes
Baking time: 10 minutes
80g tigernut flour
30g almond flour
50g vegan butter
30g almond butter
70g vegan white chocolate
70g cane sugar
1 ts baking soda
1/2 ts matcha powder
1 tbsp chia seeds
3 tbsp water
Pinch of salt
Let’s start with the chia “egg”. Soak the chia seeds in the water, set aside.
In a bowl, mix the tigernut flour with the almond flour, the sugar, the baking soda, the matcha powder and the salt. Add the vegan butter and the almond butter and mix with energy. Lastly, add the chia egg and the chocolate, stir.
Use your hands to form 10 balls with the cookie dough. Place them on a baking sheet on a baking tray.
Bake in the oven at 180°C for 10 minutes. You might need to adjust that time (+ / – one minute) depending on your oven. The cookies are ready when they are slightly brown on the sides.
